I made the decision to upgrade to a 240v element that should pull about 16 amps (3750 watts). Also that wattage wasn't really enough to boil the 7 or so gallons as vigorously as homebrewing beer requires with darker beers. I could have solved this with a fan but then I thought maybe the breaker in the box might overheat and flip. This worked but it turns out it was pulling 19.7 amps from a 20 amp circuit and the internal breaker was overheating after about 3 hours of use and flipping.
I built a PID control box shown here and used a 120v (2250 watt) heating element.
